- A more complex white wine, with medium to full body. Light tropical and stone fruit, honey, spice, and toast. Wild fermentation and light aging in oak has resulted in notes such as hazelnut and vanilla, as well as a richer mouthfeel, that would play nicely with creamier pasta dishes. These more developed characteristics of the wine, coupled with some light herbaceousness, would also complement lighter meats such as poultry and pork, with enough acidity to lend brightness to any dish.
