This special wine's wild fermentation and light ageing in oak has resulted in notes of hazelnut and vanilla, as well as a rich mouth feel, with light tropical and stone fruit, as well as honey, spice and toast. It is a beautifully complex white wine, with medium to full body. These more developed characteristics of the wine, coupled with some light herbaceousness, would complement lighter meats such as poultry and pork, with enough acidity to lend brightness to any dish and would play nicely with creamier pasta dishes as well.
