Chiorri Sangiovese, Umbria, Italy, 2017, $32
Sangiovese is a classic pairing with lasagna. High acid, coupled with a distinct tartness and a nice savory quality, help to stand up to and cut through the creaminess of the béchamel while complementing the ragù. Distinct sour cherry notes bring out the brightness of the tomatoes within the dish and the wine’s natural fermentation has created a light rustic, earthy quality to the wine that parallels the rustic, traditional elements of lasagne.

Made from the Gaglioppo grape, this wine displays dark red fruit and wood spice with an underlying smokiness. Fuller bodied with medium to full tannins, the structure of the wine accentuates the deep, meaty ragù, and subtle earthy, smokey notes complement it’s hearty flavors beautifully. The wine’s acidity enhances the acidity of the tomatoes within the ragù, while simultaneously cutting the richness of the dish.
